I waited several weeks before opening this bottle, and
decided to have it with a nice sirloin steak that I seasoned
with that Montreal Steak Seasoning; I think that the
peppercorns really carry it.
This wine has little tannins, or shall I say that their
balance is stupendous. The flavor is akin to sugar plums
and dark cherries along with some nice flavorful spices (I
want to go with nutmeg and even cardamom, but it would be
interesting to find out what other varietal is used in the
blend; I am thinking Merlot or Chambourcin). On the back of
this wine, there is a sweetness that I usually haven't found
in many Cabernet Sauvignons, and this sweetness would easily
allow you to pair this wine with anything that has a nice
glaze on it, especially wild fowl.
The color is a nice deep ruby which doesn't yield much to
light.
With this wine, and the others that I have had made by
Sergio Neri, I am interested to see some of his special
projects, or shall I say, 'taste them.'
